Sorrel Iced Tea


  • 8 cups water
  • 3 inch knob of ginger sliced
  • 1 lb sorrel
  • 6 allspice berries
  • 6 whole cloves


  • Wash the sorrel flowers and drain them in a colander.
  • Bring the water to a boil in a large saucepan, along with the ginger pieces.
  • Remove the pan from the stove, and carefully add sorrel flowers, allspice and cloves. Steep overnight or until cool.
  • Strain, and pour into a container or serving jug.
  • Serve chilled.
